Whenever I see tiramisu on a menu in a restaurant I try it with trepidation.Â I love everything about it except for the coffee.Â Sometimes when I order it the coffee taste is just too strong and sometimes is barely noticeable.Â So finding an easy recipe at home to make where I could control the coffee flavor was a home run.Â In fact I didn’t even use coffee and instead I used hot chocolate.
When you see a cookbook with a picture of mac and cheese, you know that the authors understand comfort food.Â Every recipe has a picture, but it didn’t take me long to find the one that I wanted to make.Â The cookbook is divided into 5 sections staring with easy meals for the busy work week and the last chapter is all about chocolate desserts!The Ruling:Â We loved it!Â I have enough lady fingers where I may make it again this week.Â What a treat and so easy to make.Â The hardest part is waiting the 2 hours for it to set.Â I did whip the cream and the marscapone cheese a bit to give it some body. Instead of shaving chocolate, I just sprinkled mini chocolate chips on top of it.Â You can find ladyfingers in the gourmet cheese section of the store.Â If you are serving this to children, you may want to leave out the Cointreau. When I mixed the hot chocolate, I did use milk instead of water.

- scant 1 cup strong black coffee, cooled to room temperature
- 4 tbsp. orange-flavored liqueur, such as Cointreau
- 2 tbsp. orange juice
- 16 Italian ladyfingers
- 1 1/8 cups mascarpone cheese
- 1 1/4 cups heavy cream, lightly whipped
- 3 tbsp. confectioners’ sugar
- grated rind of 1 orange
- 2 1/4 oz. chocolate, grated
- Choppped toasted almonds
- Candied orange peel
- Pour the cooled coffee into a pitcher and stir in the liqueur and orange juice. Put 8 of the ladyfingers in the bottom of a swerving dish, then pour over half the coffee mixture.
- Put the mascarpone cheese in a separate bowl with the cream, sugar, and orange rind and mix together well. SPread half the mascarpone mixture over the coffee-soaked ladyfingers, then arrange the remaining coffee mixture and then spread over the remaining mascarpone mixture. Sprinkle over the chocolate, cover, and let chill in the refrigerator for at least 2 hours.
- Serve decorated with chopped toasted almonds and candied orange peel.
