30 Days Until Christmas…..Turkey Leftovers

This is by far my favorite thing to make with turkey leftovers, even better than turkey noodle soup.  These are Chipotle turkey tacos.  My kids love them so much my husband makes them several times a month using chicken instead of the turkey.  If you have never cooked with chipotle peppers in adobo sauce, this is the recipe to try.  You can find the peppers in most grocery stores in the Mexican food isle of the store.  We freeze the leftover peppers and sauce and use them for the next batch of tacos.  You may want to start by using one pepper with your family and seeing what they think of the heat level before you use more.  This recipe was adapted from one found in “Cooking Light” magazine.



  • 1 7oz can chipotle chilies in adobo sauce
  • 2 garlic cloves, minced
  • 1/3 cup chicken broth
  • 1/3 cup orange juice
  • 2 Tbs. cider vinegar
  • 1/2 tsp. cumin
  • 1/2 tsp. dried oregano
  • 1/2 tsp. red pepper


  • 2 cups shredded cooked turkey
  • Shredded cheese
  • corn tortillas
  • diced avacado
  • lime wedges


Chop one pepper, 1 tsp of adobo sauce with the rest of the mole ingredients and saute in a pan until warm.  Add the turkey and heat until warm.  Assemble the tacos with a warmed corn tortilla, turkey, avocado, cheese and a squirt of lime.

Tip:  when my husband makes this he likes to simmer it until the sauce as all but evaporated and turned into a lovely sweet (from the orange juice) glaze on the turkey.
